Brown Butter Sauce Recipe

Despite having only a couple of ingredients, this sauce is surprisingly complex, not to mention wonderfully rich tasting! The recipe below is the one we used to top the maultaschen for our German edition of Dinner Club, although with a couple of small changes this makes an excellent sauce for any stuffed pasta, we used the variation at the bottom for our Italian edition of Supper Club. The best part is that a little goes a long way, so you don’t need to make a lot.
Ingredients:
•1/2 cup unsalted butter
•1 medium onion
•Salt
•(Optional) Pine Nuts
•(Optional) Fresh chopped Parsley
The Recipe:
For the version with onions, start by finely dicing the onions so they are a uniform shape and size. Don’t make them too large, as basically you want them to poach in the butter and cook through quite quickly.
Set a small saucepan over medium heat and put in the butter, stirring it occasionally as it starts to melt. Add a pinch of salt. Once the butter is melted, turn the pot down a tiny bit and keep an eye on it. At this point it’s just melted butter, but what you want to do is to cook it until it turns a deep golden color and develops a rich, nutty flavour. Keep stirring it occasionally and regulate the heat so it’s not boiling but close.
After a few minutes when it looks like it’s coming along, add the onions to the sauce and continue to gently stir it around. After another 5 minutes or so the onions should be nice and wilted and golden...
Just like this! Taste for seasoning and add a little salt if needed. Spoon a small amount on top of your dish and it will taste heavenly!
For a more Italian version of the same, instead of adding onions, throw in some pine nuts. This will add some extra richness and nuttiness which goes really well with filled pasta. A few minutes before you are ready to serve, throw in a handful of finely chopped parsley - don’t let it cook completely though, this will add some freshness to the sauce - you won’t believe how good it is!
